How to prep: We recommend cutting off the tougher stems to cook separately but it’s not a hard rule! Fresh shiitake should be stored in a slightly damp towel in the fridge until you’re ready to use them. They’ll keep fresh for up to a week. If they dry out, you can always rehydrate by soaking them in warm water.
