Grandma's Marinara is the backbone of Palmerino's, the sauce that cemented their family traditions. They consider this "liquid gold" and never let a drop go to waste. Named in honor of Princess Mafalda of Savoy, mafaldine really grab sauces and give a pleasurable textured bite thanks to their rippled edges.

Palmerino's pastas use Italian imported semolina flour which retains the whole grain of wheat during its stone milling. What this gives you is a pasta that your body actually knows how to digest. Many other pastas use flour that's been milled to remove the germ and the shell of the grain of wheat with the goal of extending shelf life. Trouble is, this leaves behind a product that the body does not know how to digest which is why so many people have gluten intolerances.

Bring a pot of water to boil and then add salt. Pour in mafaldine and gently stir to prevent any from sticking to the pot. Allow to cook for at least 4 minutes for al dente or longer if you like a softer bite. For the sauce, simply heat in a pot and then pour over the mafaldine and stir it in. For a better experience, sauté mafaldine, sauce, and a little pasta water in a pan to emulsify and bind the sauce to the pasta.
