Ingredients:
- Two 6oz fillets of sushi-grade, skin-on Ora King Salmon fillets
- 4 oz of pre-made Pariani Walnut Basil Pesto sauce (Contains: Pariani Walnuts, Organic Basil, EVOO, Parmesan, Sea Salt, and Pepper.)
- 2 tablespoons of authentic Italian Parinai Pine Nuts.

- Toast pine nuts:
- Heat a dry pan over medium heat (recommend a non-stick or cast-iron pan if you have one).
- Drop pine nuts into the warmed pan, shaking frequently. Cook for 2-3 minutes or until you see the pine nuts turn a toasted brown and fragrant. Remove pine nuts from pan to cutting board. Roughly chop after they have cooled, set aside.
- Cook your Ora King salmon fillets:
- Set the fillets out for roughly 5-10 minutes, allowing the portions to come to room temperature, which promotes even cooking. Pat fillets dry on all sides with a paper towel.
- Season all sides with sea salt and cracked pepper.
- In same pan used for pine nuts, heat cooking oil on medium high heat. Or swap butter for the oil (chef-secret ingredient).
- When oil is warmed and starts to shimmer, lay salmon into pan away from yourself, skin side down. Let cook on skin side without moving for about 5-7 minutes, or until you see the pink cooked salmon about 1/4 up the thickest part of the fillet.
- Flip the salmon and cook the second side for at least 30 seconds (up to 2.5 minutes for very well-done fillets), or until the fish is lightly browned and you can still see a small line of dark pink along the inside of the fish. This will form a nice tasty crust.
- Remove fillets and let rest for 3-5 minutes before serving/plating.
- Plate your fish:
- Warm pesto sauce using the microwave or on the stove in a saucepan. Generously spread pesto on top of each fillet to your liking. There will be extra leftover for another meal!
- Sprinkle toasted pine nuts on top.
- Finally, zest lemon on top for freshness/acidity. Add a lemon wedge or two on the side for added color and spritzing to taste. Serve with your side dish(s) of choice. Enjoy!
