This trout is insanely gorgeous, fatty, and marbled — you'd easily mistake it for king salmon because of it's vibrant color and fat content. Unlike the typical river trout, this one is sushi-grade! It's sustainably farmed in the freshwater springs near the foothills of Mt. Lassen in Northern California.

Trout fillet is light salmon in color, thin, and delicate. These freshwater fish have the classic pin bones — but Four Star's fishmongers remove these for you so they're ready to cook right away.
Recommended Consumption:
Recommend to consume within 2-3 days of arrival for pan searing or baking, if not within that timeframe then it should be placed in the freezer until ready to use. For sushi or sashimi preparations, recommend to consume the day of (most ideal) or within one day.

It is Sushi-grade and works amazingly well for sushi and sashimi preparations. This is not your average store-bought trout! Four Star highly recommends trying it as a trout poke. Another favorite recipe is to use in place of salmon for some trout tostadas or tacos!!
